Veggie Pork Kabobs
3/4 cup orange juice concentrate
3/4 cup orange marmalade
1 medium green pepper cut into 1” pieces
1 medium red pepper cut into 1” pieces
1 medium sweet onion cut into eighths
1/4 cup Granny M’s Mandarin Orange Glaze
2 Tbsp teriyaki or soy sauce
2 boneless pork loin chops (1 1/2” thick) cut into 1” pieces
In a bowl, combine orange juice, marmalade, Granny M’s Mandarin Orange Glaze and teriyaki sauce. Pour 1 1/2 cups into a large re-sealable bag; add pork, peppers and onions. Seal bag and turn to coat. Refrigerate for at least one hour. Cover and refrigerate remaining marinade.Coat grill rack with non-stick cooking spray before starting grill. Drain and discard marinade from pork and vegetables. Place meat and vegetables onto skewer alternating between the meat and vegetables. Grill kabobs uncovered over medium heat for 20 to 25 minutes or until meat juices run clear, turning often. Serve the remaining marmalade.
