Garlic Shrimp Stir-Fry
4 garlic cloves, minced
2 Tbsp butter or margarine
1 lb uncooked shrimp, peeled and deveined
6 oz fresh or frozen snow peas
1/2 cup each julienned sweet red and green peppers
1 Tbsp parsley
1 Tbsp basil
2 or 3 Tbsp Granny M’s Mandarin Orange Glaze or Granny M’s Pineapple Glaze
1/2 tsp salt
1/4 tsp pepper
1/4 cup chicken broth
Hot cooked rice
In a large skillet, sauté garlic in butter until tender. Add the shrimp, peas, peppers, basil, parsley, Granny M’s Mandarin Orange Glaze (or Pineapple Glaze), salt and pepper. Stir-fry for 5 minutes or until shrimp turns pink and vegetables are crisp tender. Add broth. Cook 1 minute longer or until heated through. Serve over rice.
